As with Dulse’s first site, which opened in the Scottish capital’s West Lead to 2022, the Leith restaurant will characteristic a menu focused on Scottish seafood sourced without extend from unbiased, local suppliers.

The decision to relaunch the site as Dulse comes after Banks hosted a pop-up for a unusual seafood concept called Plaice in the ASKR site following its closure.
“After our Plaice pop-up used to be a colossal success, it showed us that there used to be a real quiz for quality seafood that’s regionally sourced and reasonable,” says Banks, whose restaurant portfolio also involves Dean Banks at The Pompadour in Edinburgh and Haar in St Andrews.
“The increase we obtained from the community used to be overwhelming and made it sure that opening a second Dulse used to be the accurate switch.

Ashmore, who used to be previously govt chef of the Dean Banks Community, opened ASKR in partnership with Banks wait on in March.

Dulse Leith will launch on Wednesday (13 November).
